Vineyard: Ventana Vineyard is located just south of Salinas in Monterey County. The vines are planted on their own rootstalk, not grafted, providing a truer expression of the varietal and the vineyard. Historically, Chenin Blanc is the last fruit in the Ventana Vineyard to be harvested. The cool climate allows for more hang time, giving the fruit extra time to mature and gain complexity without becoming overripe. A small percentage (1% to 2%) of the Chenin Blanc gets botrytis, which adds to the fruit’s complexity and creates a richer mouthfeel.


Cellar Practices: The fruit is pressed whole cluster. The juice is transferred to stainless steel barrels and chilled at 45 degrees for two days. Once the wine is racked off the gross lees, it is returned to stainless steel barrels, chilled back down to 45 degrees and inoculated with yeasts isolated from the Loire Valley and South Africa.
